Easy Slow Cooker Recipes for After a Move



The temperatures are getting cooler and summer is coming to an end. If you just moved in, you’re going to be exhausted. The last thing on your mind is cooking a big meal for you family. But luckily you have your slow cooker! Slow cookers are great because you can simply put your all your ingredients in it in the morning and when you come home from work, you’ll have a great meal! Here are three easy recipes to cook in your slow cooker on chilly nights.

Pulled pork

Pulled pork is one of my favorite meals. The pork is cooked for so long that it melts like butter in your mouth. Pair it with some coleslaw and you got a great dinner!

Ingredients
  • 1 large onion
  • 6-7 lbs Pork Shoulder Chuck Roast
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 cup chicken broth
  • 1 cup your favorite BBQ Sauce 
  • 2 tbsp Worcestershire sauce
  • 3 large garlic cloves, pressed
  • 2 tbsp brown sugar
Directions
  • Chop the onion and place in the slow cooker.
  • Combine the salt, pepper, and paprika and sprinkle the mixture on the pork roast. Massage the roast to rub the seasoning into the meat. Then, place the pork roast over the onions.
  • Then combine the chicken broth, BBQ sauce, Worcestershire sauce, brown sugar, and garlic cloves. Stir to combine. Pour the mixture over the pork.
  • Cover and set on low for eight hours. After that, use two forks and shred the pork.
Stuffed peppers
Stuffed peppers are a classic dinner dish and this recipes makes it simple to make! Stuffed peppers are a great way to combine meat and vegetables.

Ingredients
  • 6 large bell peppers 
  • 1 1/2 lb lean (at least 80%) ground beef 
  • 2 teaspoons olive oil 
  • 1/4 cup finely chopped onion 
  • 2 cloves finely chopped garlic
  • 1 1/2 cups cooked white rice
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 oz) tomato sauce
  • 1 1/4 cups shredded Cheddar cheese (5 oz)
Directions
  • Trim tops off bell peppers and remove ribs and seeds. Set aside.
  • Place beef in large bowl; set aside.
  • In 6-inch skillet, heat olive oil over medium-high heat. Then add chopped onion. Cook until onion softens, stirring every few minutes. Add garlic and cook 60 seconds. Remove from the heat, letting it cool slightly.
  • Add rice, salt and pepper to beef. Add cooked onion and garlic and mix to combine. Stuff peppers with beef mixture. Then arrange in slow cooker. Pour tomato sauce over peppers.
  • Cook on low heat setting six hours. Then the last 30 minutes of cooking, top peppers with cheese.
Beefy nacho soup
Imagine a cool night in November. You're all bundle up in a blanket. Then imagine hold a nice warm bowl of beefy nacho soup and your insides get all warm. This recipe is not only easy but delicious.

Ingredients
  • 1 lb lean ground beef
  • 1 package taco seasoning
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 can (10¾ ounce) condensed nacho cheese soup (cheddar soup will also work)
  • 1 can (10 oz) diced tomatoes and green chilis, undrained
  • 1½ cups milk
  • 1 cup sharp cheddar cheese
  • Optional toppings: Crushed tortilla chips
Directions
  • In a medium sized skillet cook the ground beef, onion, and garlic until beef is no longer pink and the onion is clear. Drain the grease and add to slow cooker.
  • Add soup, taco seasoning, diced tomatoes and green chilis, and milk. Stir.
  • Cook on low 3-4 hours. Stir in ½ cup cheddar cheese and allow to melt. Can be kept on warm for an additional 4 hours. Top with crushed tortilla chips and additional cheese if desired.
